Customer Review: Hopefuly, This Will Be On DVD Next Year?
A little bird flew into the garden today, and he told me that ‘Spring And Port Wine’ looks very likely to come out on DVD next year 2008. It should have been put out years ago, but the reason being is that the studio that made the film, has been sold off, and split between several other company’s. Anyhow some agreement with all concerned is allowing a DVD for next year. Just hope the little bird is correct in what he said, I am fairly confident myself, but don’t hold your breath just incase. This is a great film, and will be even greater on DVD…..

‘The Creek Drank The Cradle’ is the sweet, melodic album written, performed, produced and recorded at home by Sam Beam. One reviewer here gave this CD a low star rating (which is entirely his prerogative) because of the poor recording quality, but I tend to feel that this element actually adds to the album. The raw, stripped back nature of the recording compliments the songs perfectly. The feel of one man and his guitar, sat in his living room, is completely captivating. The songs are spare and yet hold you spellbound throughout. A simple, beautiful album that is great to sit back to and let your cares slip away. Highly recommended. If you like this, check out ‘The Pull’ by Kreg Viesselman, another beautiful album of a similar ilk.
Customer Review: Nice songs, shame about the recording
I bought this on the back of having heard (and really liked) some Iron and Wine songs in films, etc. Had this album been my first exposure, I would have been put off for good. It was apparently recorded in a “home studio” and the sound quality is little short of appalling. Noisy, with poor EQ and mixing, it sounds as though it was recorded straight to cassette tape in some one’s bedroom, using cheap instruments that have never seen new strings. The voice is too far back in the mix and the sotto voce singing style begins to grate after about 30 seconds. It is a testament to the song-writing that I will probably seek out more recent, studio-quality recordings. However, this is one to miss unless you are a die-hard fan or want a complete collection of Iron and Wine.

The “rule of thumb” when selecting a cooking wine is to select a wine you would not mind drinking. Definitely avoid selecting a wine you prefer to drink. The truth of the matter is that all fine wines lose their wonderful characteristics during the cooking process, anyway. It is a good policy to avoid “cooking wines” from the grocery store, as they are often laced with additional sodium. In fact, it is perfectly acceptable to use whatever wine you have on hand. The type of wine used for cooking does not have to match the wine being served with the meal.

The great fun of cooking with wine is the experimenting! Their are very few hard and fast rules. Generally, white wines are better for cooking with poultry, fish and pork. Red wines are generally better with beef. Your taste buds are always the best judge. White wines can add some needed acidity to rich, creamy sauces. Unless it is specifically noted in the recipe, use dry wines for cooking rather than sweet wines.

The amount of wine you add to your dish depends on personal taste and the volume of food being prepared. You want to be sure that the wine has the opportunity to “cook off”during the simmering process. Too much wine will make that process take too long. Once you have determined the right amount of wine to add to a particular dish, definitely make a note on the recipe of the amount. Voila! the trial and error is done. Knowing how to cook with wine will greatly enhance the flavors of many of your favorite dishes.

I cook with wine a lot. You can take an easy cooking dish and use a little wine and it makes all the difference in the world. Cooking with wine does not have to be difficult or expensive. I have to say I always have wine in my house. Not just for enjoying a glass of wine, but for the purpose of cooking. Cooking with wine not only adds flavor to your dish it can also act as a tenderizer for your less expensive cuts of meats.

Now I have said it before, I only cook with wines that I will also drink. Please do not cook with cooking wine that they sell at the grocers. It is not the same. For all I care it is darn right terrible. If you think about it, why wouldn’t you cook with wine that you normally drink? If you like the wine on its own there is a good chance you are going to like it in whatever dish you are preparing. Then of course there is the benefit since you are cooking with wine, you must toast yourself and enjoy a glass while you are cooking with.

I am going to go back to what I was saying before, that cooking with wine can act as a tenderizer. Take for instance beef stew. Now for the most part stewing beef is a cheaper cut of meat. Or if you are like me, I’ll by a less expensive roast and cut it up to make stew. Either way the meat is usually tougher and you would not normally just eat it as is. You would normally simmer it in some kind of broth for at least a couple of hours. So why not instead of using only broth use some wine. The wine starts the tenderizing process quicker and adds that extra element of flavor. I can guarantee you that you will be licking your lips.

I know I said if you are going to cook with wine, then be sure it is a wine that you would normally consume. One other factor you want to take into consideration when you are cooking with wine. Make sure you pair your wine up with what you are cooking. What I mean by this is, when you are cooking a stew use a hardier wine. Stew is a very hardy meal so you don’t want to be using a Shiraz. Instead use a Burgundy or a Bordeaux type of wine.

Now I am going to share my beef stew recipe with you. You’ll find out from the quantity of wine I use, why I am talking about cooking with wine today. With stew I do so much on top of the stove and then put it in the oven for the rest of the time. Now you could also do most of the preparation the night before and then put it in a slow cooker for the day. Then finish it off when you get home.

Beef Stew With Red Wine

4lbs Stewing beef nicely trimmed
2-3 Onions Chopped not to small
12-15 Baby Carrots (I use the baby carrots that are ready to use)
1 Large Package Whole Mushrooms quartered
6 potatoes
1bottle of red wine
2-4 cups of beef broth
2 bay leafs
3 whole sprigs of thyme
Flour
2-3 Tbsp butter
Olive oil
Salt and pepper

On the stovetop heat up a large heavy Dutch oven type pot to medium heat. Cover the bottom with olive oil and add onions. Cook until golden and softening. While onions are cooking get a plate and cover generously with flour. Season the flour with salt and pepper. Lie out your meat and start to coat the meat in the flour. When the onions are soft, remove from the pot. You may have to add some more oil at this point. Place some of the meat in the pot and lightly brown. This is a very important stage in the cooking of the stew. Because of coating the meat with flour and then browning it, there will be a more intense flavor at the end. You will have to do the meat in batches. Do Not over crowd your pot. This will prevent some pieces from getting brown.

After all the meat is browned. Remove from pot. Pour in the bottle of wine. Scraping up all the bits on the bottom of the pot. These bits are pure flavor. Place all the meat, onions, thyme sprigs and bay leaves in the pot. Then add enough beef broth to cover the meat well. Place in a 300° oven for about 2 ½ - 3 hours. While the stew is in the oven, take another pan and heat to medium high heat. Cover with olive oil and add the mushrooms, season with salt. Cook until quite brown.

After stew has been in oven for about 3 hours, take out of the oven and add the mushrooms, carrots and potatoes. You may need to add a bit more beef stock at this point. Check after ½ hour to 45 minutes. If the potatoes are cooked, you are ready to remove from the oven. Place pot on your stove top on a burner heated to medium. Here is the thickening part and just some more flavor. In a small dish take 2tbsp of butter and 2 tbsp of flour. Blend together. Slowly add this in pieces to the simmering stew. This will thicken the stew. I say do this slowly so you get the thickness you want. If it is not thick enough do it again. The ratio is equal parts of butter to flour. Taste to see if you need to further season with salt and pepper.

There you go you have dinner for a couple of nights.

However, it is wise to know what you are doing when using wine to cook a meal. Knowing that the flavor of the wine may change with the length of time it is left in the food while cooking. General rules that apply to this are to let the wine cook in the food no longer than 45min for any dish. One who is going to use a wine to cook with should also keep in mind that red wines add color and a distinctly dry characteristic to the food while the white wine adds an acidic like flavor to the food.

The red wines are best used for those meals that require a touch of coloring. For example adding a good red wine to a marinara sauce or a stout stew would be ideal. While adding a nice white wine to cream sauces and seafood’s is best. White wines are also good for cooking white meats as well as other mentioned dishes.

At any rate, cooking with wine is one of the most practical ways to enhance the already perfect meal or recipe. So the next time you are preparing your extra special meal, decide to add that extra special flavoring of a good red or white wine while cooking. A noticeable difference is easily detected when some spices are substituted for cooking with wine. The addition of wine to your recipes will make your dish one that is remembered as tasty and full of flavor and color that only wine can add.

I already had several of Delia’s books, and I didn’t really think I needed another. I received this book as a gift at christmas, and like many of the other reviewers have already said, it really is fantastic. Her recipes are as always easy and simple to follow, written in such a way that inspires, even the most novice of cooks.

This book is fantastic- does exactly what it says on the tin and more. Delia does more than teaches you how to cook- she understands WHY you can’t cook, and steers you away from a pitfall before you walk into it. We’ve all tried to follow a recipe and it’s screwed up, but delia explains the techniques properly to begin with. I’ve never made one thing out of this book that has gone wrong. The difference between this and all the other cookery books i’ve read is that Delia doesn’t say “beat the egg whites”- she tells you HOW to beat the egg whites correctly and warns you against scenarios where you make a mess of it, so that you can continue with the recipe. I couldn’t cook anything before I read this book, and i couldn’t understand why, but delia’s simple hints made me realise potentially disasterous things i was doing wrong, that were resulting in my cooking being dodgy at best! Her recipes are simple and down to earth and with as much scope for making a quick snack as for making a 3 course meal. Her ingredients are not obscure, and unlike Nigella, does not expect you to have a huge american fridge with an ice crusher to hand, letalone a walk in larder full of delicacies you discovered on your year out in italy whilst at Oxford. Delia’d recipes are for real people and focus on mastering basic ingredients like eggs, flour and potatoes, and the recipes are made with things youre likely to have knocking about the house. Incidentally, I just made her 3 cheese souffle omlette- it i did it at midnight and it took me 10 mins at the most- that’s how convenient a lot of her recipes are. Like others, i credit delia with teaching me how to cook. This book is wicked- buy it! that’s all!

This wine cooler is really good, it works as described. It is a bit noisy but not annoyingly so. it warms or cools really quickly especially if you use the thermal hat thingy at first. it really does make a difference to have your wine or champers at the correct temperature. I drink predominantly red wine and it was important i bought one that warmed as well as cooled and this is good value for money and looks good on your table to.

This is an excellent book with over 2000 authentic recipes (some are very authentic - there’s a whole section on brains!) The recipes are, typically of Italian food, simple and easy to follow. There is also a small section at the back with some more complicated recipes from famous Italian chefs. All in all a top book you’re not likely to get bored with quickly.

I am a real foodie and think I could open a cook book shop with the amount of books I have. However, the Silver Spoon is certainly a top favourite of mine. I can cook but often want inspiration when faced with cooking another mid week family dinner. That is when the Silver Spoon really comes into its own. I have learnt so many new and tasty ways of cooking vegetables, for example by soaking pre sliced carrots in water for 15 minutes you can cook them for 10 - 15 minutes in a pan with no water. The result is superb as they are not too soggy or al dente but perfect. You can then add flavourants such as sliced garlic or lemon zest, butter etc to complement the carrots with the main dish. A Italian friend who lives in Nairobi, Kenya recently came to stay and she was so impressed with the Silver Spoon being in English and now being available that I gave her my copy as we did not have time to order another copy on-line and our local book shop was sold out. I realised then how much I missed the book when it was not in my kitchen for a few weeks. Luckily my new copy has arrived. One does however, need to know how to cook to use the book with ease. It assumes that you know how to do the basics and there are no photographs and pretty pictures. But if you can cook, invest in the Silver Spoon and you will use it every day in your kitchen. A sound investment! Highly recommended.
